Which valorisation strategies will unlock growth for whey and milk co-products in a protein-first market?
Global demand for dairy proteins (WPC80, WPI, caseinates, MPC/MPI, MCC/MCI) is accelerating across sports nutrition, medical applications and mainstream food & beverage. At the same time, supply is struggling to keep pace, creating a structural protein gap and sustained price pressure.
As new capacities are built to respond to this demand, a parallel challenge is emerging: how to manage and valorise the growing volumes of co-products.
The dairy protein boom is generating rapidly increasing volumes of whey and milk permeate, which are outgrowing traditional outlets such as lactose, standardisation and feed. As a result, the industry is moving from a volume-driven strategy to a value-driven strategy, where future profitability will increasingly depend on the industry’s ability to valorise co-products and develop high-value ingredients.
Increasing protein supply & demand could generate an additional production of 700kt of whey permeate powder by 2030 – that’s at least +4% per year between 2025 and 2030 in the US and EU. Considering liquid permeate, that would be much more!
Key strategic questions addressed:

Gira’s “Future Permeate & Protein Bottleneck” study provides a complete strategic outlook to 2030, with a unique focus on permeate and co-products.
Part 1: Dairy protein supply & demand to 2030
Quantification of global production and consumption trends, by region and application, including EU, North America, Oceania, South America, Asia and the Middle East. Analysis of future capacity additions, demand drivers (including GLP-1 impact), and the expected supply-demand gap.
Part 2: Co-product valorisation strategies
Deep dive into permeate markets: production forecasts, key applications, functionality requirements, competitive landscape and innovation trends. Identification of high-margin opportunities and emerging uses, including fermentation and new ingredient pathways.
Optional modules:
Whey Protein Phospholipid Concentrate (WPPC)
Native whey proteins
Deliverables
The ‘Future Permeate & Protein Bottleneck’ study will be published in June 2026. Clients will receive a written report (PDF format) – strategic insights & market forecasts to 2030 – and a one-hour webinar presentation of the results and future opportunities (including Q&A).
