Foodservice Market Reports in Germany & Poland & Forecasts to 2030

The European foodservice market is entering a new phase

Understanding where growth will come from in two of Europe’s key foodservice markets through to 2030

Europe’s foodservice sector has experienced several years of exceptional disruption.

Across the EU27+UK, while market value has returned to its 2019 level in 2023 and value growth is expected to continue – with an estimated +4.8% increase in 2026 compared to 2019 – recovery remains uneven.
Consumer footfall continues to lag behind 2019. Inflation, changing consumer spending and geopolitical uncertainty continue to influence demand and consumer confidence. At the same time, there are encouraging signs. Higher average meal checks and supportive policy measures, including VAT reductions in several countries, have helped sustain market turnover, and early indicators suggest that 2026 could mark the beginning of a broader recovery.

The challenge is no longer whether the market will recover, but how that recovery will unfold.

Will all foodservice segments grow at the same pace? Will independent operators continue to dominate? Could social foodservice become a stronger growth driver as consumers seek greater value? And where should suppliers, manufacturers and distributors focus their efforts over the next five years?

These are strategic questions that require more than just data. They require a detailed understanding of how the market is structured today—and how that structure is likely to change.

Foodservice Market in Germany & Poland 2025/26–2030

To help businesses navigate this changing landscape, Gira has published two new market studies covering the German and Polish foodservice markets.

Together, they provide a comprehensive analysis of market structure, competitive dynamics and future development through to 2030.

Why Germany and Poland?

Germany and Poland represent two very different market profiles.

Germany is one of Europe’s largest foodservice markets, generating an estimated EUR 88.2 billion in sales in 2025. Nearly 70% of the market is held by independent and self-operated foodservice operators. Although consumer confidence remains fragile, meal and snack volumes are expected to return to growth from 2026 onwards.

Poland, by comparison, has a foodservice market estimated at EUR 32.8 billion. While smaller in absolute size, it is expected to experience more dynamic growth over the coming years, making it one of Europe’s most dynamic foodservice markets.

Understanding these differences is essential for businesses developing country-specific strategies.
